Falafel Crusted Chicken Breast
2 boneless skinless chicken breasts, pounded to flatten
1/4 cup dried falafel mix
1 medium cucumber, peeled, halved lengthwise, and the seeds removed
1 medium ripe tomato, dices with seeds removed
1 cup iceberg lettuce or hearts of romaine, chopped
1/4 cup kalamata olives, pits removed
2 tablespoons fresh mint, finely chopped
5 tablespoons prepared hummus
4 pita breads
