Super healthy and easy to make Cilantro Lemon Pesto is wonderful to have on hand, as it is good for you and makes anything you put it on even better. Try on fish and seafood for a taste sensation! My friend Sandi at solutionthroughnutrition.com gave me this recipe and said it is good as a liver cleanser, too. So try it on everything and call it a health food! Enjoy!
Cilantro Pesto
1 bunch fresh cilantro, stems and all
2-4 cloves garlic, peeled
juice of 1 lemon
1 inch piece of ginger, peeled and cut into large chunks
olive oil
sea salt or kosher salt, to taste
In a food processor, pulse cilantro, garlic, lemon juice, and ginger until smooth, scraping down sides with a spatula. Add enough olive oil and continue to pulse a few more times until you have a smooth texture and season with a bit of salt.
To serve, use as a condiment with fish, grilled chicken, shrimp or scallops. Try it stirred into watermelon chunks or toss with pasta. Enjoy!
