Greek-style Tzatziki Yogurt sauce, gluten free

Makes: about 1 1/2 cups

Total Time: 16 minutes

1 small clove garlic, smashed and minced well
1 Tablespoon fresh lemon juice
3/4 cup plain Greek-style yogurt, such as Fage or Zoi
1/2 English cucumber, peeled, cut in half lengthwise, seeds removed, grated on large holes of a box grater, excess liquid squeezed out (1/2 cup)
1/4 cup minced fresh mint leaves
1 tablespoon minced fresh flat leaf parsley leaves
1/2 teaspoon table salt

1. Combine Garlic & Lemon: In a medium bowl, add garlic and lemon juice and stir together to combine. Set bowl aside and let sit 10 minutes to mellow garlic.

2. Finish & Serve: Add the yogurt, cucumber, mint, parsley and salt and stir well to combine. Serve and enjoy!
