For the Topping:
3/4 cup gluten free old-fashioned rolled oats
3/4 cup sliced almonds
1/3 cup gluten free flour blend for muffins & quick breads (or flour blend of choice)
1/4 packed light or dark brown sugar
2 Tablespoons granulated sugar
2 teaspoons vanilla extract
1 teaspoon water
pinch table salt
6 Tablespoons unsalted butter, cut into 6 pieces and softened
For the filling:
4 teaspoons fresh lemon juice
3/4 teaspoon gluten free cornstarch
3 pound Golden Delicious apples (about 7 medium peeled and cut into 1/4 inch cubes)
1/3 cup granulated sugar
pinch table salt
pinch ground cinnamon
pinch ground nutmeg
1. Preheat Oven: Adjust oven rack to middle position. Heat oven to 400 degrees.
2. Toast Oats & Nuts: Line a baking sheet with parchment paper. Place oats and almonds in separate piles on the baking sheet. Bake until lightly toasted, about 3 to 5 minutes. Remove from oven and let cool.
3. Make Topping: In a food processor, add 1/2 cup only of the toasted oats, flour blend, brown sugar, granulated sugar, vanilla, water and salt and process until combined, about 5 or 6 pulses. Add butter pieces and 1/2 cup only of the toasted almonds and process until the mixture clumps together into large balls, about 30 seconds, stopping halfway through to scrape the sides of the processor.
4. Finish Topping: Add remaining almonds and oats and pulse together with 2 quick pulses. Transfer mixture to a bowl.
5. Make Filling: To a large mixing bowl add lemon juice and cornstarch and whisk together to dissolve cornstarch. Add apples, sugar, salt, cinnamon and nutmeg and stir together well to combine.
6. Bake Filling: Transfer apple mixture to a 8 inch square baking dish. Cover tightly with aluminum foil. Bake for 20 minutes.
7. Add Topping: Remove baking dish from oven and stir apples well to combine. Sprinkle topping evenly over apple filling. Bake, uncovered, until topping is well browned and apples are bubbly, about 20 to 25 minutes, rotating dish halfway through baking time.
8. Cool & Serve: Let crisp cook on a wire rack about 15 minutes before serving. Enjoy!
