1 head iceberg lettuce
3 Tablespoons hoisin sauce, gluten free
2 Tablespoons tamari sauce (gluten free soy sauce)
2 Tablespoons water
2 Tablespoons minced garlic (about 6 cloves)
2 teaspoons minced fresh ginger
2 teaspoons plus 2 Tablespoons avocado oil or peanut oil
1 pound ground chicken
salt and fresh ground black pepper
1 red bell pepper, diced small
1 can (8 ounce) sliced water chestnuts, drained and diced small
4 green onions, sliced thin on the bias
1. Prep Lettuce: Remove core by whacking the bottom core end of the lettuce down onto the counter or cutting board. Grab the core end with your fingertips and twist to remove core. Discard core. Carefully peel away 8 large leaves. (Save remaining lettuce for another use.)
2. Make Sauce: In a small bowl, add the hoisin sauce, tamari sauce and water and stir together well to combine.
3. Prep Aromatics: In a small bowl, add the garlic, ginger and 2 teaspoons of the oil. Set aside.
4. Cook Chicken: In a large non-stick skillet over medium-high heat, add 1 tablespoon of oil and heat until shimmering, about 1 minute. Add chicken and spread in an even layer. Cook chicken, stirring often, until just cooked through and no longer pink, about 3 to 4 minutes. Season with salt and pepper then stir to combine. Transfer chicken to a bowl.
5. Cook Peppers: To the now empty skillet, add remaining 1 Tablespoon of oil and heat until shimmering, about 1 minute. Add red bell pepper, water chestnuts and green onions and cook, stirring often, until peppers are soft, about 3 minutes.
6. Cook Aromatics: Make a well in the middle of the pan by mounding the pepper around the edges of the pan. Add garlic, ginger and oil mixture to the middle of the pan and cook until fragrant, about 30 seconds, stirring to keep from burning garlic.
7 Finish & Serve: Stir sauce to recombine then pour into pan. Add the cooked chicken to the skillet and stir together until thickened. To serve, transfer lettuce leaves to individual serving plates then spoon mixture into lettuce leaves. Enjoy!
