Ginger Pork and Broccoli Stir Fry, gluten free

broccoli and pork stir fry

3/4 cup reduced sodium chicken broth, divided
2 Tablespoons reduced-sodium gluten free tamari sauce
2 Tablespoons gluten free cornstarch
1 Tablespoon chili-garlic sauce
1 teaspoon toasted sesame oil
1 to 1 1/2 pound pork tenderloin, cut crosswise into 1/2 inch thick pieces, those cut into 1/2 inch strips
3 Tablespoons avocado oil, coconut oil or peanut oil
1 pound broccoli florets cut into 1 inch pieces, stalks trimmed, peeled and cut into 1/2 inch thick pieces
1 Tablespoon minced fresh ginger
1 Tablespoon minced fresh garlic

1. Make Sauce: In a medium bowl add 1/2 cup broth, tamari sauce, 1 Tablespoon corn starch, chili-garlic sauce and sesame oil and stir together to combine. Set aside.

2. Coat Pork: In a medium bowl add the pork pieces and 1 Tablespoon oil and toss together to coat pork. Add remaining 1 Tablespoon corn starch and toss together to coat pork well.

3. Cook Pork: In a large wok or 12 inch nonstick skillet add 2 teaspoons oil and heat over medium-high until just smoking. Add one half only of the pork tenderloin pieces and spread out in an even layer. Leave pork undisturbed 1 minute before stirring. Cook pork until browned on all sides, about 5 minutes total. Transfer pork to a bowl or a plate and repeat with 1 Tablespoon oil and remaining coated pork.

4. Cook Broccoli: To the now empty wok, add remaining 2 teaspoons oil and heat over medium-high until just smoking. Add the broccoli pieces and cook until bright green, stirring often, about 1 minute. Add remaining 1/4 cup broth and cover pan. Cook about 3 minutes or until broccoli is nearly tender. Remove lid and increase heat to high. Cook, stirring often, until most liquid is gone, about 1 minute more.

5. Add Aromatics: Add the ginger and garlic to the wok stir to combine. Cook until fragrant, about 30 seconds.

6. Finish & Serve: Stir the sauce mixture to recombine them add to the wok and cook until thickened, about 2 minutes. Return the pork and any accumulated juices to the wok and stir well to combine. Cook until pork is heated through, about 1 minute. Serve and enjoy!
