Makes: 6 servings
1/3 cup apple cider vinegar
2/3 cup extra virgin olive oil
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
2 pounds mushrooms (such as crimini and shitake, washed and trimmed)
1. Mix Marinate: In a large bowl whisk together the vinegar, salt and pepper until salt is dissolved.
Slowly drizzle in olive oil while whisking to emulsify dressing.
2. Coat Mushrooms: Add mushrooms to bowl and toss well to coat mushrooms. Let set 5 minutes, then toss again to redistribute marinade.
3. Grill Mushrooms: Pour mushrooms onto heated grill and spread into an even layer. Grill mushrooms, tossing to cook on all sides, until mushrooms begin to soften and grill marks appear, about 4 to 5 minutes.
4. Serve Hot: Serve hot and enjoy.
