Caribbean Chicken Salad, gluten free

For the Dressing:

1/2 cup mayonnaise
1/4 cup fresh lime juice
1 Tablespoon Jamaican Jerk Seasoning

For the Salad:

3 cups chopped or shredded cooked chicken (1 rotisserie chicken, if using)
2 Romaine lettuce hearts, chopped into bite size pieces
1 ripe mango, peeled, pitted, cut into 1/2 inch pieces
1 small jicama, cut into small 1/2 inch pieces
1 red bell pepper, stem and seeds removed, cut into 1/2 inch pieces
1/4 small red onion, cut into thin strips

1. Make Dressing: In a large bowl, whisk the mayonnaise, lime juice and jerk seasoning together until well combined.

2. Make Salad: Add the chicken, romaine, mango, jicama, red bell pepper and red onion to the bowl and toss together well to combine.

3. Serve & Enjoy: Transfer to salad serving plates and serve. Enjoy!
