Easy to double or triple recipe depending on the quantity of watermelon rind you have to use. For each cup of peeled and trimmed watermelon rind cut into 1/2 inch pieces, you will need:
1 cup peeled, trimmed water melon rinds, cut into 1/2 inch pieces
1/2 teaspoon gluten free reduced sodium tamari sauce
1/2 teaspoon rice vinegar
1/2 teaspoon kosher salt
1. Make Marinade: Add tamari sauce, rice vinegar and salt to a bowl or zipper storage bag and stir or toss together until salt is dissolved.
2. Marinate Watermelon: Add watermelon pieces to bowl or bag and toss together to coat. Allow to set at room temperature 15 minutes, stirring occasionally, before serving to allow flavors to blend and mellow.
3. Serve & Enjoy: Serve pickled water melon rind at room temperature or cover and refrigerate up to 3 days. Enjoy!
