Thai-Style Mango Salad with Peanut-Lime Dressing, gluten free

For the Salad:

1 head (7 ounces) butter leaf lettuce or greens of choice, torn into bite sized pieces
1 red or orange bell pepper, cut into 1/4 inch wide strips
3 ripe mangos, peeled and diced, or 1 bag frozen mango chunks, thawed
3-4 green onions, sliced thin on a diagonal (green and white parts)
1/2 cup chopped roasted peanuts
1/4 cup chopped fresh cilantro

For the Dressing:

1/4 cup creamy peanut butter
1/4 cup fresh lime juice
1 Tablespoon tamari sauce (gluten free soy sauce)
1 Tablespoon apple cider vinegar
1 Tablespoon maple syrup or honey
1 teaspoon toasted sesame oil
2 cloves garlic, minced
1/8 teaspoon red pepper flakes

1. Make Salad: Combine the salad ingredients in a large salad bowl. Toss together to combine.

2. Make Dressing: In a large measuring cup or bowl, whisk together the dressing ingredients until well combined.

3. Dress Salad & Enjoy: Drizzle dressing over salad and toss together to coat. Serve immediately. Enjoy!
