1/4 cup sour cream
1 Tablespoon extra virgin olive oil
1/2 teaspoon lime zest plus 1 Tablespoon fresh lime juice
3/4 teaspoon kosher salt
1/2 teaspoon canned chipotle peppers in adobo sauce
1/4 teaspoon ground cumin
1/8 teaspoon pinch fresh ground black pepper
2 cups frozen corn, thawed, or fresh corn
1 (15 ounce) can black beans, rinsed and drained
3 green onions, sliced thin
1 Tablespoon chopped fresh cilantro
1. Make Dressing: In a medium bowl, add sour cream, extra-virgin olive oil, lime juice, salt, chipotle peppers, cumin, and fresh ground black pepper. Whisk together to combine.
2. Finish Salad: Add the corn, black beans, green onions, cilantro and lime zest to the bowl and stir together to combine.
3. Serve & Enjoy: Transfer to a serving bowl or individual serving plates and serve. Enjoy!
