Sweet potatoes, coconut milk and orange juice take you on a trip to Jamaica!

Serves: 4 – 6 as a side dish
Prep Time: 10 minutes
Total Time: 50 minutes

2 pounds sweet potatoes, peeled and cut into 1 inch dice
1/2 cup coconut milk
1/4 cup fresh orange juice
2 Tablespoons unsalted butter or coconut oil
1 Tablespoon packed brown sugar
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger powder
kosher salt to taste

1. Cook Potatoes: Place potatoes in a medium saucepan. Add water to just barely cover potatoes. Bring to a boil over high heat. Place lid on pan  and reduce to medium. Simmer potatoes until they are fork tender, about 18 – 20 minutes.

2. Drain Potatoes: Drain any remaining water from potatoes and return potatoes to pan.

3. Finish Potatoes: Off heat, add coconut milk, orange juice, butter, brown sugar, allspice and ginger to potatoes and stir well to combine.

4. Finish and Serve: Add kosher salt to taste and stir well to combine. Serve hot. Enjoy!
