Creamy Parmesan Polenta, gluten free

6 cups water
1 Tablespoon kosher salt or 2 teaspoons table salt
1 1/2 cups coarsely ground cornmeal (polenta)
2 Tablespoons unsalted butter, cut into pieces
1 cup grated Parmesan cheese

1. Boil Water: In a medium saucepan over high heat, bring water to a boil. While whisking constantly in a circular motion, slowly add the cornmeal to the boiling water (this will help prevent clumping.) Bring to a simmer.

2. Cook Polenta: Cover pan and reduce heat to low. Cook, stirring or whisking often and vigorously (get into the corners of the pan) until smooth and creamy, about 30 minutes.

3. Finish & Serve: Off heat, stir in the butter and Parmesan cheese until well combined. Serve and enjoy!
