Lemon Basmati Rice in the Microwave, gluten free

You don’t really save a ton of time here – only about 5 minutes – but the results are perfect every time and even better than your very best batch of basmati rice made in a rice cooker. Guaranteed. Honest! The fresh lemon juice and the brightness of the lemon zest make this a delicious side dish for many fish and seafood dishes. Try it with Crab Stuffed Jumbo Shrimp or Shrimp Scampi.

2 cups white basmati rice
2 1/2 cups water
1 Tablespoon (or more) zest plus 1/2 cup fresh lemon juice from 3-4 lemons
2 teaspoons kosher salt

1. Boil Rice: To a large microwave safe bowl add rice, water, lemon juice and salt and stir to combine. Microwave on high power for 15 minutes or until steam holes appear in the surface of the rice and liquid is absorbed.

2. Cover Rice: Cover rice with a lid or microwave-safe cling wrap and continue to cook for 5 minutes.

3. Rest Rice: Let rice set for 5 minutes.

4. Finish & Serve: Fluff rice with a fork and fold in zest. Serve hot. Enjoy.
