2 Tablespoons butter
2 pounds sweet potatoes, peeled, cut into 1/2 inch chunks
1 cup reduced sodium chicken broth or water
1. Saute Sweet Potatoes: In a large non-stick skillet set over medium-high heat add the butter. When butter is melted add the sweet potatoes to pan and toss together to coat sweet potatoes with butter. Cook the sweet potatoes, stirring often, until brown edges start to appear, about 5 minutes.
2. Add Broth: Add the broth to the potatoes. Cover pan and reduce heat to medium-low.
3. Simmer Potatoes: Simmer sweet potatoes until they are fork tender, about 15 minutes.
4. Serve & Enjoy: Season sweet potatoes with salt and pepper. Serve hot. Enjoy!
