2 pounds fresh ripe heirloom tomatoes in a variety of colors
1/2 pound fresh mozzarella cheese ball or 4 sticks string cheese, pulled into shreds
1/4 cup fresh basil leaves
1 Tablespoon balsamic vinegar
2 Tablespoons extra virgin olive oil
pinch of kosher salt
1. Prep Tomatoes: Remove cores from tomatoes and slice about 1/2 inch thick, or cut into wedges if you prefer.
2. Prep Cheese: Slice cheese into 1/4 inch slices.
2. Assemble Salad: To assemble, layer tomato slice, then a slice of cheese, the a few basil leaves. Repeat, using all of the tomatoes and mozzarella slices and basil.
4. Dress & Serve: Drizzle with balsamic vinegar and oil. Sprinkle with kosher salt, to taste. Enjoy!
