Smoked Salmon Cucumber Bites

2 English cucumbers, peeled in stripes, if desired, cut into 1 inch rounds
4 ounces smoked salmon
6 ounces cream cheese, softened
1 Tablespoon fresh lemon juice
1/4 teaspoon Old Bay Seasoning
kosher salt to taste
cilantro leaves or fresh dill sprigs for garnish

Using a vegetable scoop, remove seeds from the cucumber rounds, carefully removing most of the seeds but leaving a bit at the bottom so the cucumber is not left hollow in the middle. Place on a serving platter.

Chop the smoked salmon, and place in a medium bowl. Add cream cheese, lemon juice and bay seasons and mix on medium with an electric hand mixer until combined. Check for seasoning and season with salt, as needed.

Spoon softened cream cheese mixture into a resealable sandwich bag or pastry bag. Snip the corner off of the bag and pipe the salmon filling into the cucumbers, making a nice peak. Garnish with pimento and fresh parsley or dill, if desired,  and serve immediately.
