Serves 4
1/4 cup creamy peanut butter
3 Tablespoons gluten free hoisin sauce
3 Tablespoons hot water
2 Tablespoons fresh lime juice
2 Tablespoons fresh cilantro
3 large (about 2 pounds) boneless, skinless chicken breasts
1 cup sesame seeds
2 -3 Tablespoons high heat cooking oil, such as avocado or coconut
kosher salt
1. Make Sauce: In a medium bowl, stir peanut butter, hoisin sauce, water and juice together until smooth. Stir in cilantro. Set aside.
2. Prep Chicken: Pat chicken dry with a paper towel. Cut chicken into 1/2 inch wide strips.
3. Coat Chicken: Pour sesame seeds in a shallow dish and coat chicken pieces with seeds, pressing to adhere.
4. Prep Pan: Heat 1 Tablespoon oil in a large skillet over medium high heat until oil shimmers.
5. Cook Chicken: Place some of the chicken pieces in skillet and cook, undisturbed, about 4 minutes, until well browned. Carefully turn chicken and continue to cook until sesame seeds are browned and chicken is cooked through, another 4-5 minutes. Place cooked chicken on a paper towel lined plate and set aside. Clean out skillet, removing any seeds. Heat remaining oil and repeat with the rest of the chicken.
6. Serve & Enjoy: Serve with the dipping sauce. Enjoy!
