Total Time: 20 minutes or more for marinating
1 pound carrots, peeled, ends trimmed, cut into thin matchsticks, 2-3 inches long
1 English cucumber, cut in half lengthwise, sliced diagonally into 1/8 inch thick pieces
1 medium red onion, halved, peeled and cut into thin strips
1/4 cup seasoned rice vinegar
2 Tablespoons light brown sugar
1. Combine Salad: In a medium size bowl, toss carrots, cucumber and onion together.
2. Make Dressing: In a small bowl, whisk rice vinegar and brown sugar together until sugar is dissolved.
3. Combine and Marinate: Pour dressing over salad mixture and toss to coat. Set aside to marinate at room temperature 15 minutes or up to 1 hour before serving.
4: Serve: Toss once more to combine and serve. Enjoy!
