Simple Eggs Florentine

Serves 1 or 2

2 handfuls baby spinach, washed and dried
1 Tablespoon butter
3 eggs
kosher salt to taste
1 Tablespoon plus 1 teaspoon shredded Parmesan cheese

Heat a medium skillet over medium heat. Add spinach and wilt, tossing often, about 1 minute. Add butter to the pan and swirl the pan to melt butter. In a small bowl, beat eggs lightly, then add to the skillet, tilting pan to distribute eggs. Cook eggs and spinach, stirring often, until eggs are just set, 1 minute. Salt to taste. Remove from heat and stir in 1 Tablespoon Parmesan cheese. Plate eggs and top with remaining 1 teaspoon cheese. Serve immediately. Enjoy!
