Total Time: about 20 minutes, depending on waffle iron cooking times
1 1/2 cups gluten free tapioca starch/flour
1 cup gluten free brown rice flour
1 cup gluten free sweet white sorghum flour
4 teaspoons baking powder
1 teaspoon salt
2 teaspoons sugar
1 teaspoon xanthan gum
3 cups buttermilk
1 Tablespoon apple cider vinegar
1/2 cup oil
4 eggs
1. Combine Dry Ingredients: In a medium bowl, whisk together tapioca starch, brown rice flour, sorghum flour, baking powder, salt, sugar and xanthan gum to combine. Set aside.
2. Make Buttermilk: Add vinegar to buttermilk and stir.
3. Combine Liquids: Add oil and egg to milk and whisk together to break egg.
4. Mix Batter: Add buttermilk mixture to dry ingredients and mix to combine.
5. Cook & Enjoy: Pour into hot waffle iron in batches and cook as directed. Repeat with remaining batter. Enjoy.
