Mango & Strawberry Lassi, gluten free

Serves 4

2 1/2 cups diced fresh mango or frozen mango chunks, thawed
1 cup ice cubes
3/4 cup lite coconut milk
1/2 cup mango nectar
1/2 cup Greek style yogurt (okay to use low fat version)
2-3 fresh ripe strawberries, stem removed
2 Tablespoons fresh lime juice (juice from 1/2 a large lime)
1-2 Tablespoons honey or a pinch of stevia, to taste

1. Make Lassi: Puree mango, ice, coconut milk, yogurt, strawberries, lime juice and honey in a blender until smooth.

2. Serve: Divide evenly among 4 glasses and serve immediately.
