Cucumber and cilantro relish

Garden fresh cucumbers and cilantro make a healthy and versatile relish

 

This is a great way to use up some of those cucumbers that are bursting from the garden and the farmers markets. Fresh cilantro and lime make this great for dipping tortilla chips into or as a topping for grilled fish and grilled chicken breasts. Toss it into cold pasta with a bit of  seasoned rice vinegar and low fat sour cream for an easy, healthy salad.

Cucumber-Mint-Cilantro Relish

1 cucumber, seeds removed, cut into fine dice
1/2 cup diced red onion
handful finely chopped fresh mint
handful finely chopped fresh cilantro, stems and leaves
1 small jalapeno, stem and seeds removed, finely diced
juice from 1 lime
2 cloves garlic, finely minced
kosher salt to taste

In a medium bowl, toss all ingredients well to combine. Let set a few minutes to allow flavors to mingle. Enjoy!
