Makes: one 9 inch x 13 inch cake
Prep Time: 10 minutes
Total Time: 1 hour, plus cooling time

3 cups gluten free flour blend for muffins and quick breads
2 teaspoons xanthan gum
1 3/4 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon ground ginger
1/2 teaspoon table salt
1 cup coconut oil
1 cup granulated sugar
2 cups unsweetened applesauce
1 teaspoon vanilla extract
1 cup raisins
1 cup chopped walnuts or pecans

1. Preheat Oven: Place oven rack in center position. Preheat oven to 350 degrees.
2. Prep Pan: Spray a 9 inch x 13 inch baking pan with non-stick cooking spray. Set aside.
3. Mix Dry Ingredients: In a large mixing bowl, whisk together flour blend, xanthan gum, baking soda, nutmeg, cinnamon, cloves, allspice, ginger and salt until combined. Set aside.
4. Mix Oil & Sugar: In a medium mixing bowl, whisk together coconut oil, sugar, applesauce and vanilla extract until well combined.
5. Make Batter: Stir one half of the dry mixture into the wet mixture until combined. Repeat with remaining dry mix. Stir in raising and nuts until combined.
6. Bake Cake: Transfer batter to prepared pan. Spread batter into an even layer and smooth top. Bake for 40 minutes, or until set and toothpick inserted in the middle of the cake comes out with a few crumbs attached.
7. Cool & Serve: Transfer cake to wire rack and let cool 20 minutes before cutting. Serve warm or at room temperature. Enjoy!
