Fresh Fruit Tacos, gluten free

Fresh Fruit in a Cinnamon Sugar Tortilla

 

Makes 8 tacos

1 cup gluten free masa harina (corn flour)
1/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
4 figs, cut into bite size pieces
2 large ripe peaches, pits removed, peeled, and cut into bite size pieces
1/2 cup fresh blueberries
juice from 1 lime
1 teaspoon sugar
pinch of salt

1. Mix Dough: Whisk all ingredients together in a medium bowl to combine. Add 1/2 cup plus 2 tablespoons water and stir to combine. Knead gently with your hands to form a dough.

2. Press Dough: Roll dough into walnut size balls and press using a tortilla press. Place dough between plastic before pressing.

3. Cook Tortillas: Cook on a hot, dry cast iron skillet for about 1 minute, 15 seconds. Flip tortilla and continue to cook for about 30 seconds.

4. Make Fruit Filling: In a medium bowl, toss figs, peaches, blueberries, lime juice, sugar and salt together.

5. Finish & Serve: Divide fruit evenly between tortillas and serve. Enjoy!
