Italian Winter Fruit Salad, gluten free

Serves: 4 to 6
Prep Time: 15 minutes
Total Time: 1 hour, includes chilling time

3 Tablespoons granulated sugar
zest and juice of 1 lime
pinch table salt
1 1/2 cups diced jicama, chayote or cucumber (1/4 inch dice)
2 oranges, 3 clementines or 1 large grapefruit, peeled, cut into segments
4 cups diced mango, pineapple or papaya, peeled and pitted, cut into 1/2 inch dice

1. Make Syrup: In a medium saucepan, bring sugar, zest and lime juice to a simmer, stirring constantly until sugar is dissolved, about 1 minute. Remove pan from heat.

2. Add Jicama: Stir jicama into hot syrup and let cool to room temperature, about 20 minutes or so.

3. Finish & Chill: When jicama is cooled, stir in oranges and mango and stir together well to combine. Refrigerate for 15 minutes or up to 1 hour before serving. To serve, stir gently to combine. Enjoy.
