Chilled Mango-Spacho Soup, gluten free

refreshing mango gazpacho

Serves 4

2 large ripe mangos, peeled and cut into 1/4 inch dice
2 English cucumbers, one peeled, cut into 1/4 inch dice
1 fresh jalapeno, minced, seeds removed
1/4 cup diced strawberries
1 jar (2 ounce) diced pimentos
4 green onions, thinly sliced on the diagonal
2 garlic cloves, minced
2 Tablespoons fresh basil, minced
2 tablespoons fresh chopped cilantro leaves
1/2 cup cold water
1 cup mango nectar
1/4 cup fresh orange juice
2 Tablespoons fresh lime juice
2 Tablespoons fresh lemon juice
2 Tablespoons distilled white vinegar
1 teaspoon kosher salt, or more to taste
1/2 teaspoon sugar, honey, or stevia, to taste

1. Combine Ingredients: In a medium bowl set into a larger bowl full of ice, combine all ingredients except salt and sugar.

2: Chill Soup: Allow soup to chill 30 minute or longer, stirring occasionally.

3. Serve & Enjoy: Test chilled soup and season with salt and sugar, to taste. Serve soup cold. Enjoy!
