Thai sticky rice with coconut milk and mango

Serve: 6
Prep Time: 10 minutes plus 8 hours to soak rice
Total Time: 30 minutes active time plus soaking time

1 cup short or medium grain white rice
1 can or 2 cups coconut milk (not coconut water)
1/4 cup palm sugar or granulated sugar
2 ripe mangos, peeled and diced

1. Soak Rice: Cover rice with cool water and soak 8 hours or overnight. Drain rice and set aside.

2. Cook Rice: Transfer rice to a medium sized cooking pot and cover rice with 1 3/4 cups water. Bring rice to a boil, cover rice and reduce heat to low. Simmer rice on low until liquid is absorbed and rice is tender, about 20 minutes.

3. Make Syrup: While rice cooks, make syrup. In a saucepan, simmer coconut milk and sugar together until sugar is dissolved. Set aside.

4. Finish & Serve: Heap rice onto serving bowl. Top rice with mangos. Pour coconut milk syrup over rice and mango. Serve warm. Enjoy!
