Makes: about 48 cookies

Total Time: 1 hour, includes baking time and cooling time
You can double the recipe or easily cut it in half….by why would you do that?
2 cups all natural creamy peanut butter
2 cups packed light or golden brown sugar
2 eggs
1. Preheat Oven: Position oven rack to center. Preheat oven to 350 degrees.
2. Mix Dough: In the bowl of an electric mixer, mix peanut butter, brown sugar and eggs until well combined, scraping down sides as needed, about 1 minute.
3. Form Cookies: Using a small scoop, roll dough into balls and place on ungreased cookie sheet 2 inches apart. Using the back of a fork or potato masher, gently press a criss-cross patter into the cookies, flattening them slightly to a diameter of about 2 1/2 inches or so.
4. Bake & Cool: Bake cookies until the edges start to brown slightly, about 10 – 12 minutes, being careful not to over bake. Remove pan to a wire rack and let cookies cool on pan 5 minutes before transferring to wire rack to cool completely. Serve and enjoy!
