Sweet & Spicy barbeque sauce on grilled chicken

Makes: about 1 1/2 cups sauce
Prep Time: 8 minutes
Total Time: 35 minutes, plus cooling time

2 Tablespoons vegetable oil or other light, mildly flavored oil
1 medium yellow or white onion, finely minced
2 garlic cloves, finely minced
1 teaspoon ancho chili powder
1/2 teaspoon cayenne pepper
1 cup organic ketchup
5 tablespoons dark molasses
2 Tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
2 Tablespoons Dijon mustard
2 Tablespoons light brown sugar
1/4 teaspoon table salt
fresh ground black pepper, to taste

1. Cook Onion: In a medium saucepan, heat oil over medium-high heat. Add onion and cook until soft, about 5 minutes, stirring often. If onion starts to brown around the edges, reduce heat and continue to cook.

2. Add Aromatics: Add garlic and pepper powders to onion and stir well to combine.

3. Add Ingredients: Pour in ketchup, molasses, vinegar, Worcestershire, Dijon mustard, brown sugar, and salt. Stir well to combine.

4. Simmer Sauce: Bring to a boil, reduce heat to low and simmer until sauce is thick, about 20 minutes, stirring often. Add fresh ground pepper to taste.

5. Cool Sauce: Remove from heat and let cool before using, as flavors blend and mellow as it cools. Adjust salt and pepper, if needed, and serve. Enjoy!
