Fast, delicious, and no greasy orange fingers

I went to a business after hours networking event this evening expecting to eat plenty to cover dinner like I usually do at these sorts of events. Unfortunately, this one was serving Buffalo chicken wings, not one of my favorites, and everyone there had greasy orange fingertips. There was very little hand shaking going on, I’ll tell you that. At one point someone mentioned that they had declined to give a business card to a potential client because they didn’t want to put a dirty hand in their own pocket. This should be a lesson on what not to serve when folks are trying to mingle. Orange greasy fingers are not good for business. Note to self.

When I got home I was hungry, with no prior plans to cook any dinner. It was already nearly 8 pm and I had to act fast. I did have a couple of boneless skinless chicken breasts that I hadn’t cooked the night before and plenty of raw vegetables, so I opted for a quick stir fry. Sliced chicken breasts, onions, three different colors of bell peppers ( I had a half of each color left over from before), mushrooms, carrots and a can of sliced water chestnuts were met with some chunk pineapple in juice, brown sugar, soy sauce and a touch of chili oil.  A little corn starch and water thickened the mix at the end. To complete the stir fry I topped it with chopped green scallions. While that was cooking I made white rice and within a half an hour I was enjoying dinner with clean fingers.
