Mangos are available year round but seem particularly nice at this time of year. This deliciously spicy sweet Mango-Tomato salsa is great on Fish Tacos, Jamaican Jerk Chicken or Fish, and with chips, too. To pick a ripe mango, check for a little give near the stem. If it is wrinkled, it might be too far gone. Color is not a great indicator, so better to just smell for ripeness (a strong scent of mango) and a little give when pressure is applied.

2 ripe mangos, peeled and diced into 1/2 inch size pieces
1 cup diced red ripe tomatoes
1/2 cup diced red onion
1 jalapeno pepper, minced (remove seeds and pith for milder flavor)
1/4 cup minced cilantro
2 Tablespoons fresh lime juice
pinch of kosher salt
1. Make Salsa: In a medium bowl, toss the mango, tomato, onion, jalapeno and cilantro with the lime juice.
2. Season & Serve: Test salsa for salt and season to taste. Serve and Enjoy!
