1 pound tomatillos, husks removed, rinsed and quartered
2 pounds red ripe tomatoes, quartered, core and seeds removed
1 small white onion, peeled and coarsely chopped
1 jalapeno pepper, stem removed, cut in half
1/4 cup chopped fresh cilantro
kosher salt, go taste
1. Puree Tomatillos: Place tomatillos in food processor and puree until smooth. Pour tomatillo puree into bowl. Set aside.
2 Chop Ingredients: Place tomatoes in a food processor and pulse several times. Add onion and jalapeno and pulse again, scraping down sides as needed. Add cilantro and pulse once more.
3. Mix and Serve: Mix tomatoes into tomatillo puree and stir to combine. Season with salt. Serve. Enjoy!
