Mexican Memelas

2 cups masa harina (Maseca brand)
1 1/3 cup warm water
1 teaspoon kosher salt

1. Make Dough: In a medium bowl, combine ingredients with a wooden spoon until combined. With your hand, knead dough together for 2 – 3 minutes and form a smooth ball. Set aside.

2. Preheat Griddle: Heat cast iron griddle over medium heat.

3. Form Memelas: Roll dough into 1 1/2 inch balls. Roll that into a 3 inch log. Press in a tortilla press.

4. Heat Memelas: Heat memelas on the hot griddle until some golden spots appear, about 1 minute. Flip and cook another minute. Remove from heat.

5. Form Memeles: When memelas is cool enough to touch, form a wall around the edge by pushing dough against your thumb with your finger about 1/4 inch from outer edge. Pinch a few places in the middle to created texture.

6 Repeat: Finish making memeles. Set aside.

7. Fill and Cook: Fill memelas with 2 Tablespoons of crumbled cheese and your choice of toppings. Heat on griddle until cheese is bubbly, about 2 – 3 minutes. Serve hot. Enjoy!
