Serves 4

2 Tablespoons avocado oil or light olive oil
1 Tablespoon fresh squeezed lime juice
1 Tablespoon fresh squeezed orange juice
1 teaspoon minced fresh shallot
pinch kosher salt
1 cup grated jicama
2 ripe avocados, pit and peel removed, sliced thin crosswise
2 ripe mangos, removed from pit, peeled and sliced thin crosswise
2 Tablespoons chopped fresh cilantro

1. Make Dressing: Whisk oil, juices, shallot and salt together in a medium bowl.

2. Dress Jicama: Place jicama into bowl and toss to coat.

3. Form Salads: Using a ring mold on a small plate, layer a quarter of the avocado, a 1/4 cup of the jicama, and a quarter of the mango, tapping down between layers. Sprinkle with cilantro and carefully remove ring. Repeat with remaining ingredients on remaining plates.

4. Serve & Enjoy: Serve immediately. Enjoy!
