Tangy Cilantro Slaw

Serves: 4 to 6

Total Time: 24 minutes

1/2 cup fresh lime juice
2 Tablespoons extra virgin olive oil
1 Tablespoon granulated sugar
1/4 teaspoon table salt
1/4 teaspoon red pepper flakes
1/2 medium red onion, sliced into thin slivers
1/2 head green cabbage, shredded thin then chopped coarse
1/2 head red cabbage, shredded thin then chopped course
2 carrots, peeled, grated
4 green onions, chopped
1 bunch fresh cilantro, chopped, then minced (3/4 – 1 cup)

1. Make Dressing: In a medium mixing bowl, whisk together lime juice, olive oil, sugar, salt and pepper flakes until sugar and salt are dissolved.

2. Soak Onions: Add sliced onions to mixture. Toss to coat onions. Set aside.

3. Make Slaw: In a large mixing bowl, combine cabbages, carrots, green onions and cilantro. Stir to combine.

4. Dress Slaw: Pour onions and juice mixture over slaw and toss well to coat. Let rest 5 minutes.

5. Serve & Enjoy: Toss slaw well to coat with dressing. Transfer to serving bowl or individual serving dishes. Enjoy!
