Dandelion Salad with Balsamic Vinaigrette, Tomato and Pine Nuts

For the greens, pick dandelions from the yard or wherever you can find them. Wash and spin to dry. This recipe is “per person.”

1 teaspoon balsamic vinegar
2 tablespoons extra virgin olive oil
pinch of kosher salt
pinch of fresh ground pepper
1/2 teaspoon sugar
Handful of dandelion greens, washed and dried
1/2 red ripe tomato, cored and sliced thick
1 tablespoon pine nuts

1. Make Dressing: Whisk vinegar,salt, pepper and sugar in a bowl until combined. Drizzle in olive oil, whisking constantly.

2. Dress Salad: Drizzle dressing over greens. Top with tomato slices and sprinkle with pine nuts. Endure!
