Serves 4
1 cup fresh mango chunks or frozen mango chunks, thawed
2 Tablespoons apple cider vinegar (Bragg’s brand if available)
2 Tablespoons water
dash of stevia powder or 1/2 teaspoon honey
pinch of red pepper flakes (if using)
2 Tablespoons minced fresh cilantro
3 cups torn romaine lettuce leaves
1/4 cup thinly sliced red onion
1 cup sliced fresh strawberries
2 ripe avocados, cut into large chunks
1 ripe mango, peeled and diced
1. Make Dressing: In a food processor, process mango, vinegar, water, stevia or honey and pepper flakes, if using, until smooth and well combined. Stir in cilantro.
2. Toss Salad: In a large bowl, toss romaine lettuce, red onion, strawberries, avocado and mango. Drizzle salad with half of the dressing and toss to coat. Reserve remaining dressing for another use.
3. Serve & Enjoy: Divide salad evenly among plates and serve.
