For the Dressing:
1/3 cup buttermilk
1/4 cup fresh lemon juice
2 Tablespoons mayonnaise
1 Tablespoon Dijon mustard
2 teaspoons honey
1/2 cup peeled, shredded cucumber, squeezed to remove excess moisture
1 Tablespoon minced fresh tarragon
kosher salt and fresh ground black pepper to taste
For the Salad:
4 cups torn romaine lettuce leaves
1/4 cup thinly sliced red onion
1/2 cup crumbled feta cheese
1/4 cup pitted kalamata olives, chopped
1. Make Dressing: Whisk together buttermilk, lemon juice, mayonnaise, mustard and honey in a small bowl to combine. Stir in cucumber and tarragon and season with salt and pepper to taste. Set aside.
2. Make Salad: In a large bowl, toss romaine, onion, feta and olives together.
3. Dress Salad & Serve: Pour dressing over salad and toss to coat. Divide salad between 4 plates and serve. Enjoy!
