For the Dressing:
1 Tablespoon white wine vinegar
1 Tablespoon fresh lemon juice
1 Tablespoon extra virgin olive oil
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper to taste
For the Salad:
2 ears sweet corn, husk and silk removed, raw, boiled or grilled
1 cup fresh blueberries
6 cups mixed salad greens such as spring mix
4 green onions, sliced thin at a diagonal
1. Make Dressing: In a small bowl, whisk vinegar and lemon juice with salt and pepper until salt dissolves. Add oil slowly while whisking to emulsify oil with the dressing. Set aside
2: Make Salad: In a medium bowl, toss corn, berries, greens and onions together.
3. Dress Salad: Drizzle dressing over salad and toss gently once more to combine.
4. Serve & Enjoy: Divide evenly between plates and serve. Enjoy!
