Serves: 6-8
Prep Time: 18 minutes
Total Time: 1 hour, 30 minutes (includes 1 hour resting time)

1 large head green cabbage, cored and sliced thinly, chopped
1 green bell pepper, sliced into thin strips
1 medium onion, chopped
2 carrots, grated
2/3 cup sugar
1 cup apple cider vinegar (Bragg’s Brand)
1 teaspoon salt
1 teaspoon dry mustard (or 2 teaspoons Dijon mustard)
1 teaspoon celery seed
2/3 cup vegetable oil or other light oil
fresh ground black pepper, to taste

1. Combine Vegetables: In a large bowl, toss cabbage, bell pepper, onion and carrots together until combined. Set aside.

2. Cook Dressing: In a small saucepan, combine sugar, vinegar, salt, mustard, and celery seed over medium heat and stir to dissolve sugar. When dressing begins to steam, but prior to boiling, remove from heat. Slowly whisk in the oil.

3. Dress Vegetables: Pour hot dressing over vegetables and toss to coat. Let set, tossing a few times to recombine, about 1 hour.

4. Finish & Serve: Season with pepper. Enjoy!
