Mandarin Spinach Salad

Delicious Mandarin Spinach Salad

Serves 6 – 8

Prep Time: 25 minutes
Total Time: 30 minutes

1 bag baby spinach, cleaned and ready to eat
4 strips bacon, cooked until crispy, then crumbled
2 hard boiled eggs, chopped*
1 cup bean sprouts
1 can mandarin oranges, drained
1 can sliced water chestnuts, drained (8 ounces)
1 cup sliced button mushrooms (1/4 inch thick)
1/2 cup red onion, sliced thin, rinsed in cold water if too strong
  Dressing
1/3 cup ketchup
1/3 cup sugar
1/3 cup apple cider vinegar

1. Combine Salad Ingredients: Combine Salad Mix  ingredients in a large bowl and toss together.

2. Make Dressing: For the dressing, combine ketchup, sugar and vinegar in a glass jar with a lid. Shake well to combine.

3. Dress & Serve: Just before serving, drizzle 1/2 of the dressing over salad and toss. Serve remaining dressing on the side. Serve immediately.

*Hard boiled eggs- Bring 3 cups water, a pinch of salt, and eggs to a boil in a medium saucepan. When water comes to a boil, cover and remove from heat. Let set EXACTLY 10 minutes. Place eggs in ice water for 5 minutes. Serve or refrigerate up to 3 days.
