Serves 4 (if serving a large group, use the whole melon and adjust the other ingredients accordingly)
1/2 medium red onion, peeled and sliced thin into strips
1/2 large ripe seedless watermelon, rind removed, cut into 2 inch cubes
juice of 2 fresh limes
3 -4 tablespoons fresh mint, finely chopped
drizzle of olive oil
sea salt
4 tablespoons crumbled feta cheese
1. Dress Onions: In large bowl, add onions and lime juice and toss to coat. (This will mellow the onion a bit.) Let sit 5 minutes.
2. Make Salad: Place watermelon and mint in bowl and toss to combine. Drizzle with olive oil and sprinkle with a bit of sea salt and toss once more to combine.
3. Finish & Serve: To serve, divide melon onto four plates or bowls and sprinkle with feta cheese. Enjoy!
