2 small to medium lemons, quartered
1 medium white or yellow onion, peeled and quartered
1/2 cup reduced-sodium tamari sauce (gluten free soy sauce)
1/4 cup rice vinegar
2 cloves garlic, peeled
1 1/2 pounds jumbo shrimp, peeled and deveined, tails left on
1. Make Marinade: Place lemon, onion, tamari, rice vinegar and garlic in a food processor and pulse until minced, scraping down sides as needed.
2. Marinate Shrimp: Pour marinade in a zipper bag. Add shrimp and toss to coat. Seal bag and refrigerate for 20 – 30 minutes.
3. Preheat Broiler: While shrimp marinate, place oven rack near broiler element and preheat broiler.
4. Cook Shrimp: Remove shrimp from marinade. Discard marinade. Place shrimp in a single layer on baking sheet and place under broiler. Cook about 6 minutes, flipping after 4 minutes, if needed, until shrimp are bright pink and opaque.
5. Serve & Enjoy: Remove from oven and let rest 30 seconds. Serve hot and enjoy.
