Smoked salmon in elegant cucumber rounds

 

This is a fast and elegant way to serve a simple smoked salmon cream cheese filling in a tasty little bite of crunchy, cool cucumber. Try this one for an elegant dinner party starter or as a nibble at a picnic.

Smoked Salmon Cucumber Bites

2 English cucumbers, peeled in stripes, if desired, cut into 1 inch thick rounds
4 ounces smoked salmon
8 ounces cream cheese, softened
1 Tablespoon fresh lemon juice
1/4 teaspoon Old Bay Seasoning
kosher salt to taste
cilantro leaves or fresh dill sprigs for garnish

1. Prep Cucumbers: Using a vegetable scoop, remove seeds from the cucumber rounds, carefully removing most of the seeds but leaving a bit at the bottom so the cucumber is not left hollow in the middle. Place on a serving platter.

2. Make Filling: Chop the smoked salmon, and place in a medium bowl. Add cream cheese, lemon juice and bay seasons and mix on medium with an electric hand mixer until combines. Check for seasoning and season with salt, as needed.

3. Fill Cucumbers: Spoon softened cream cheese mixture in a resealable sandwich bag or pastry bag. Snip the corner off of the bag and pipe the salmon filling into the cucumbers, making a nice peak.

4. Finish & Serve: Garnish with cilantro leave and serve immediately. Enjoy!
