Fast, fresh and super easy potato, chorizo and kale soup.

This soup is super fast to make and incredibly hearty and filling. It is gluten free, of course, if you make sure your broth and sausage are. To soften the kale and bring out the sweetness, after chopping it, form the kale into golf ball sized hand fulls and briskly rub between your palms back and forth a few times. This will soften the kale, brighten the color, and greatly improve the texture. Use regular oregano if you can’t find the Mexican type, usually available on the grocery aisle with the “Mexican” foods. And it reheats nicely, too! Enjoy this simple soup any night of the week.

1 Tablespoon avocado oil or light olive oil (DO NOT USE extra-virgin or it will burn)
1 medium white or yellow onion, minced
3 garlic cloves, minced
6 cups low-sodium chicken broth, vegetable broth or water
1 pound red potatoes, diced into 1/2 inch chunks or sliced into 1/8 inch thick slices
1/4 teaspoon dried Mexican oregano
1 bay leaf
1 teaspoon table salt
1/4 teaspoon fresh ground black pepper

8 ounces chorizo sausage, cut into 1/4 inch thick slices if links or pinched into small 1/2 inch “balls”
1 bunch kale, washed and stems removed, leaves finely chopped (massage kale to bring out the sweetness)

1. Cook Onion & Garlic: In a large Dutch oven or heavy stock pot, heat oil over medium-high heat until shimmering. Add onion and 1/2 teaspoon salt and cook until onions are softened, 5 minutes, careful not to brown the onions. Add garlic and continue to cook until fragrant, another 30 seconds, stirring constantly.

2. Make Broth: Stir in broth, potatoes, oregano and bay leaf. Bring to a simmer and cook until potatoes are tender, 10 minutes.

3. Add Sausage & Kale: Add sausage and kale to soup and continue to simmer until sausage is cooked through, another 5 minutes.

4. Finish & Serve: Off heat, remove bay leaf and  mash some of the potatoes on the side of the pot with the back of a spoon to thicken. Stir soup, adjust salt and pepper to taste and serve hot. Enjoy!
