Spinach, bacon and figs with a tart vinaigrette

 

Fresh spinach is always a good thing, and bacon always makes things better, so I started thinking….I had some left over cooked bacon from breakfast and ripe figs from my sister in law’s house.To make the dressing, I tore the bacon into small pieces and heated it over medium high until sizzling. In a small bowl, I whisked apple cider vinegar, balsamic vinegar and olive oil, then poured it over the bacon. It sizzled and splattered and reduced nicely into a tart and tangy dressing; a perfect foil for the sweet, ripe figs.
