Stuffed on Stuffed Bell Peppers

I have green bell peppers in the crisper that needed to be used and ground beef was on sale at the store, so it seemed like a good day to make stuffed bell peppers. I love these things, but the packaged ones have so much sodium and fat that it cannot be good for you. So I make mine and control those things. You can use any color of pepper you want. Green bell peppers are less sweet when cooked, but that is the color I had so that is what I’m making. To compensate, I am serving on a bed of corn.
