roasted butternut squash with onions, lime and cilantro

Total Time: 30 minutes

3 cups butternut squash cut into 1 inch chunks
1 medium white or yellow onion, sliced into thin strips
1 Tablespoon avocado oil or other light cooking oil of choice
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/4 teaspoon ground cumin
2 Tablespoons minced fresh cilantro
2 Tablespoons fresh lime juice

1. Preheat Oven: Adjust oven rack to middle position. Preheat oven to 450 degrees.

2. Prep Pan: Line a baking sheet with parchment paper. Set aside.

3. Prep Squash: In a medium bowl, toss the squash, onion and oil together to coat. Season with salt, red pepper flakes and cumin. Transfer squash to prepared pan.

4. Roast Squash: Roast squash until slightly tender, about 10 minutes.

5. Finish & Serve: Transfer mixture to a bowl. Add cilantro and lime juice and gently stir together to coat and serve hot. Enjoy!
