Citrus Hominy Hummus, gluten free

2 cans (15 ounce size) white hominy, drained and rinsed
1/2 cup sour cream
1/4 cup fresh orange juice
1 Tablespoon extra virgin olive oil
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
salt and black pepper to taste.

1. Heat Hominy: Add hominy and 2 cups water to a medium saucepan and cover. Bring to a boil over medium high heat and cook until heated through, about 3 minutes. You may cook in a microwave safe bowl instead for

2. Puree Hominy: Drain hominy and transfer to a food processor. Add sour cream, orange juice, oil, garlic powder and cumin. Puree until smooth. Add more juice or oil to thin consistency, if needed.

3. Season & Serve: Season with salt and pepper and serve. Enjoy!
